Sweet Potato “Toast” & Garlic Mushrooms
These sweet potato “toasts'' are a great choice when on a cleanse or looking for a fat-free filling meal. Serve them with a big salad to make a heartier meal or enjoy them alone for a light meal or snack. They are easy to make, and the ingredients are simple, combining sweet with savory.
1 large sweet potato
1 cup chopped mushrooms of your choice
2 garlic cloves, minced
A handful of fresh or dried herbs - sage, thyme, rosemary
¼ cup chopped fresh parsley or kale leaves
½ tbsp freshly squeezed lemon juice
Preheat oven to 200C. Line a baking sheet with parchment paper.
Cut the ends off of the sweet potato, then cut lengthwise 1 cm thick slices.
Arrange slices on the baking tray and bake until tender and easily pierced with a fork, about 15-20 minutes.
Place a small, non-stick ceramic skillet on medium-high heat. Add the mushrooms and sauté for 3-5 minutes, until the mushrooms are soft. If needed, add bit of coconut aminos or water to prevent sticking.
Stir in the garlic and continue cooking for 2-3 minutes. Remove from heat.
Stir in the chopped herbs, parsley, and lemon juice.
Serve toast immediately topped with cooked mushrooms and parsley.
