​Millet Tortillas

Fat and oil free - cleanse friendly

This recipe uses millet which is a tasty gluten-free grain. Millet likely originated in Africa, and then spread throughout Asia and the Middle East roughly 10,000 years ago. It is a strong crop that is able to grow well in relatively harsh and dry environments. 

Millet is a good source of carbohydrates that is rich in nutrients, vitamins, minerals and organic compounds. It is rich in B vitamins, calcium, iron, potassium, zinc, and magnesium.   

It can be used in porridge, snacks, and is a great replacement for wheat and other less healthy grains. 

These delicious gluten-free and corn-free Millet Tortillas are the perfect vehicle for an endless variety of mouthwatering toppings. They are one of the few grains that can be incorporated in a cleanse, thus providing a filling and tasty solution that is satiating and tastes great. Millet Tortillas are easy to make and can be combined with endless different toppings. They freeze well, and thus can be made in advance.

Ingredients:

2 cups water

2 cups millet flour

1 tbsp minced fresh garlic or ½ tbsp garlic powder

¼ tsp sea salt, optional - I use ½ tsp herbal finishing salts. 

Directions:

Bring 2 cups of water to a boil in a shallow saucepan. Add the millet flour. Do not stir. Allow the water to continue at a low boil for 2 minutes. Then add the garlic and the sea salt (if using). Remove from the heat and mix until combined. The dough formed will feel dry to the touch. Transfer the dough into a bowl and set aside until cool enough to touch.

Form the dough into small balls about 2 inches in diameter. Place a ball between two pieces of smooth plastic wrap and roll flat. Using a small circular bowl or cup as a template, cut an even circle of dough around the outside of the bowl. Set the round aside and repeat with the rest of the dough.

Place a large ceramic nonstick skillet on medium-high heat. Place tortillas closely but not overlapping in the pan. Flip every two minutes until golden brown and freckled on both sides. Continue until all the tortillas are toasted.

Makes 10-12 servings
